Poached fruits

Marry together a medley of fruits for this autumnal treat

Blackberry Sunday roast 3

From Vanilla Black by Andrew Dargue (Saltyard Books, £25): Simmer 300ml of water in a pan and add 75g golden caster sugar, 300ml red wine, 7.5cm orange zest and 1 clove. Poach 2 Bramley apples until soft . Remove. Repeat for 2 conference pears then 2 red plums. Discard the peel and clove then reduce the liquid by half. Place fruit plus 75g blackberries in a bowl and pour over the liquid.
